USED KING arthur unbleached all purpose flour
used a 1/3 of teaspoon of yeast
let bread dough rest from 3.15 pm to 11.45 am next day in tight close bowl in oven ( 20 hours and half) but dough didn’t seem to have risen a lot not nearly doubled in size.
then floured teh cutting board a lot and dropped dough on it and covered loosely with trash bag. Rise 2 more hours and cooked 30 minutes in ceramic pot with lid preheated at 450 degrees.
bake 15 minutes without lid to brown outside of bread!!! YUM!
next time try to cook at 450 for 40 minutes instead of 30 since the bread inside was a bit raw and I had to put back in the oven at 450 for another 10 minutes. + 15 minutes without cover to brown crust.
